About Japanese Knife Lab

Who We Are

Our Mission

Japanese Knife Lab exists to bridge the gap between Japan's centuries-old knife-making traditions and an international audience hungry for authentic knowledge. We believe that understanding a knife goes far beyond specs and price tags — it requires hands-on experience, cultural context, and genuine expertise.

Our goal is simple: help you discover, understand, and choose the right Japanese knife through expert reviews, in-depth guides, interactive shop maps, and cultural storytelling — all rooted in first-hand experience across Japan's legendary blade-making regions.

Our Expertise

Hands-On Testing

Our editors visit knife shops in Kappabashi, Sakai, Seki, and other blade-making regions to test knives in person — evaluating edge retention, balance, fit and finish, and overall cutting feel.

Steel Knowledge

From White Steel #1 and Blue Super to VG-10 and ZDP-189 — we understand the metallurgy behind each blade. Our reviews explain how steel type affects sharpness, durability, and maintenance.

On-the-Ground Research

Our shop maps and city guides are built from actual visits by our editors — not aggregated listings. We walk the streets of Kappabashi, talk to shop owners, and verify details first-hand.

Japanese Knife Lab Editorial Team

Japanese knife specialists — Tokyo, Japan

The Japanese Knife Lab Editorial Team is a Tokyo-based group of editors and researchers specializing in Japanese knives. We visit bladesmiths, walk the knife streets of Kappabashi, and report from blade-making regions including Sakai, Seki, Echizen, Tsubame-Sanjo, and Tosa.

Our hands-on approach — personally testing knives, understanding steel types, and learning sharpening techniques from professionals — forms the foundation of every review and guide on this site. Our mission is to make Japanese knife culture accessible to enthusiasts worldwide, combining deep local knowledge with clear, trustworthy content in four languages.

Editorial Policy

First-Hand Sourcing

Our articles are built on hands-on testing and on-site reporting by our editors. We never publish simple summaries of other sites or copy from manufacturer catalogs.

Price & Spec Transparency

Prices, steel types, and sizes reflect information verified at the time of publication or from official sources. Dynamic data is reviewed and updated periodically.

Affiliate Disclosure

Some links on this site may generate affiliate commission. We only recommend products our editorial team has independently evaluated, regardless of commission.

Continuous Updates

When new steels or products launch — or when our reporting uncovers new information — we revise existing articles so the content stays accurate.
